Olive oil is a very useful and healthy ingredient. Produced in many countries, especially around the Mediterranean sea.
One of our partners, Logothetis farm in Zakynthos, Greece is trying to produce as good quality olive oil as possible.
They found that stone milling is their traditional way and the best way for their olive. Unfortunately, no one is making the stone mill in Greece even though it is a part of their tradition. Luckily, they found someone in Italy and imported the stone mill.
Now, their olive oil is literally cold “pressed”. Centrifugation is a common method to “extract” oil from the fruits nowadays.
