Variety: Rosa Marchetti ¬†– A fine and traditional Italian variety of rice, belonging to the “medium” group, tasty and with excellent cooking properties.

This is a sticky rice. You can use this rice for risotto, sushi and other Japanese/Korean/Chinese cuisine.

Una Garland has been practicing agroforestry and growing this rice without applying any chemicals and fertilisers for about 20 years. They started saving seeds in 2001.

They use only traditional varieties and use a old machine to work with the rice.


How to prepare Sushi vinegar

Ingredients (for 6 cups of rice=900g)

  • 90ml of unrefined¬†apple cider vinegar
  • 50ml of light maple syrup (You can adjust an amount of maple syrup according to your taste. )
  • 2 tsp of sea salt

Put all ingredients in a jar, put a lid on and shake it until the salt dissolves. The vinegar can be kept in a fridge for up to a month.

When you find your favourite Sushi recipe on the internet, just replace rice vinegar with this Sushi Vinegar.
