This rice has been cultivated without the use of any chemicals, synthetic fertilisers, or animal manures, practicing zero-input farming for a period of two years. Every year, we collected and preserved seeds for sowing in the following year.
We will process 5kg of brown rice to produce white rice. (You can choose a milling level of approximately half-milled or 70% milled, but we do not recommend 100% white.)
After the milling process, the volume may decrease by 5-10%, resulting in approximately 4.5 kg of white rice.
Once the rice is milled 50% or more, it becomes suitable for making sushi.
How to prepare Sushi vinegar
Ingredients (for 6 cups of rice=900g)
- 90ml of unrefined apple cider vinegar
- 50ml of light maple syrup (You can adjust an amount of maple syrup according to your taste. )
- 2 tsp of sea salt
Put all ingredients in a jar, put a lid on and shake it until the salt dissolves. The vinegar can be kept in a fridge for up to a month.
When you find your favourite Sushi recipe on the internet, just replace rice vinegar with this Sushi Vinegar.
